Wyeast 3278 Belgian Lambic Blend
Adding an ice pack for each tube or packet of liquid yeast in your order will reduce the effect of heat on your yeast during transit. Ice packs are an inexpensive insurance policy.
This blend contains yeast and bacteria cultures important to the production of spontaneously fermented beers of the Lambic region. Specific proportions of a Belgian style ale strain, a sherry strain, two Brettanomyces strains, a Lactobacillus culture, and a Pediococcus culture produce the desirable flavor components of these beers as they are brewed in Brussels. Propagation of this culture is not recommended and will result in a change of the proportions of the individual components. This blend will produce a very dry beer due to the super-attenuative nature of the mixed cultures.
Temperature Range: 63-75° F (17-24° C)
Alcohol Tolerance: approximately 11% ABV
Keep refrigerated. Do not freeze. Activator™ packages will sometimes swell slightly, or moderately during shipping or later while properly stored. This is not an indication of deterioration if the package is less than 6 months old and has been properly handled. This is result of trace amounts of nutrients, still available at the time packaging, causing small amount of culture activity and CO2 production. Some strains are more prone to this than others.
